Rick's Mushroom Risotto

Ingredients
Cooked brown rice - 3 cupsmushrooms - sliced, 5 medium plus stems, dicedonions- diced 1/3 cupchicken broth 2 cupswhite wine 1/3 c.olive oil 1 T
Directions
Makes 6 - 1/2 cup servings
Heat oil; saute onions with mushtoom stems until onions caramelize. Add white wine and cook for about a minute until alcohol evaporates. Add brown rice to onion mixture. Add 2/3 of chicken broth and mushroom slices and cook down liquid on simmer; add more broth as needed until all broth used up, Cook down until mixture is creamy and thick.
