Curry Shrimp

1 doz shrimp1tblsp. curry powder1tblsp. salt1/2 medium onion chopped1 sprig of Thyme1/4 green bell pepper1/2 carrot diced4 oz. olive oil1tblsp butter1 cup water
Heat oil in a skillet, saute onions then remove them from skillet. Add curry powder to the hot oil, stir continuously for about 1 minute or until the color changes.
Now add all the vegetables, including the sauteed onions, and water to the skillet. Add salt to taste. Allow the ingredients to boil until the vegetables are semi-soft.
Add the shrimp to the vegitables and reduce heat, when the color of the shrimp starts to change, add butter and thyme.
Simmer until gravy starts to develop.
Makes 3 servings, good over Rice.
(you can use frozen or thawed pre cooked shrimp)
