Rumbamel's Quaker Oatmeal Blueberry Pancakes

Ingredients
-3C Quaker Oatmeal Pancake Mix-5 large fresh egg whites-2 1/4 C skim milk (I used Aldi brand 90 cal per C)-2 C fresh blueberries
Directions
--Mix all ingredients, except blueberries, together in a large mixing bowl with a whisk until lumps are gone. Let sit for a couple minutes to thicken.

--Pour using a 1/4 C measuring cup onto a preheated griddle or skillet over low heat and cook until tops are almost dry (look for bubbling), then flip and cook for about a minute. I don't use oil or spray because I have a really good skillet. Circulon is the brand.

--Makes 24 servings of 1 pancake each.
