4tbsp baking powder0.75 tsp kosher salt1 tsp sugar2 cups flour (all purpose)2 tbsp shortening2 tbsp unsalted butter0.75 cups 2% milk
combine dry ingredients in a bowl and wisk
add shortening and butter (chilled and cut into small pieces)
work together with your hangs until the flour looks like it has small balls or clumps in it (just smaller than peas)
add the milk and fold LIGHTLY (overmixing will result in tough nasty biscuit due to the presence of gluten in the flour)
the dough ball should be a little sticky when you're done (you should have only kneeded the dough 8 to 10 times max)
place dough ball on a floured surface and roll out to 0.75 inch thickness.
cut with a 2 inch cutter
place in ungreased baking pan just touching and bake for 10-13 minutes at 350 until just brown on top
makes 8 servings
