Half box of Barilla Whole Grain Penne1 medium zucchini, chopped1 small carrot, peeled and sliced2 cups steamed broccoli (I use Bird'sEye SteamFresh and just put in half the bag)2.5 tbsp EVOO1/3 cup shredded paremsanGarlic powderDried BasilDried Oregano(Or Italian Seasoning)
Put pasta water on to boil. Prep veggies. Saute zucchini and carrots, steam broccoli. (I also sauteed 2 small cloves of garlic to infuse the veggies with extra flavor) Cook veggies to desired firmness. Boil pasta according to directions on box. After pasta has drained, toss with veggies. Drizzle with olive oil. Add parmesan and seasonings to taste, toss and serve warm.
