Stewed Zucchini

Ingredients
4 cups zucchini - cubed (I leave the skins on - wash first!)4 cups tomates - diced (with juice)1 Tbl extra virgin olive oil2 cloves garlic - chopped1 cup onion - chopped 2 tsp Italian herbs - like Mrs. Dash's
Directions
Cover bottom of heavy sauce pan with olive oil and saute onion and garlic. Once lightly browned, add tomatoes and zucchini. Season with herbs and cheese. Simmer approximately 1 hour or until zucchini is tender.

This is great to make when zucchini is fresh. I portion this out into freezer safe containers so I have it all winter.
