Cheeseburger Pie

1 lb lean ground beef2 tomatoes, sliced1 1/2 cups chopped onion1 cup shredded light cheddar cheese1/2 tsp salt1/4 tsp pepper3/4 cup Bisquick baking mix1 1/2 cups shredded lettuce1 1/2 cups skim milk16 slices dill pickle3 eggs
Heat oven to 400. Grease 10 x 1 1/2" pie plate. Cook and stir beef and onion in 10" skillet until beef is brown; drain. Stir in salt and pepper; spread in plate. Beat baking mix, milk and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour into plate. Bake 25 minutes. Top with tomatoes and cheese. Bake until knife inserted in centre comes out clean, 5-8 more minutes. Cool 5 minutes. Top with lettuce and pickles. Serves 6-8.
