Risotto with Tofurky Sausage

1 Tbsp. olive oil2 cloves garlic, minced2 cups white rice (arborio is preferable)4 cups vegetable broth1/2 cup white wine (optional)1 package Tofurky sausage (Sweet Italian)Salt & pepper to tasteOptional additions: Sweet green peasChunks of steamed squash
In a large pot, bring vegetable broth to a boil; then lower heat and allow broth to simmer. Add wine, if using.
In a separate pan, heat olive oil. Add minced garlic and fry until softened. Add rice and continue sauteeing for 2 more minutes. Add half a cup of the broth/wine mixture and stir the rice. Allow the liquid to get totally absorbed into the rice and then add another half cup of the broth. Continue until broth is finished. Rice should be cooked through and creamy. If it's not, add more water or broth using the process described above.
At the end, you can add salt & pepper to taste, and stir in the Tofurky sausage (I generally slice into 1/2-inch chunks) and veggies.
