Turkey Sausage Breakfast Muffins

8 oz Ground Turkey3 ea Egg, fresh2 oz Heavy Whipping Cream2 oz Cheddar Cheese, shredded2 oz Parmesan Cheese, grated.25 Spinach, fresh, chiffonadeSeasonings: Italian seasonings, Poultry seasoning, cayenne pepper, salt, pepper, etc...
1. Reheat oven to 350F.
2. Spray 12 minu muffin pans with non-stick spray.
3. Brown ground turkey in a skillet over med heat until fully cooked. Break it apart as it cooks. Drain off liquid. Add seasonings of your choice.
4. Beat eggs and heavy cream together.
5. Layer cheeses, ground turley and spinach in muffin cups. Pour in egg mixture.
6. Bake about 20 minutes, or until puffed and golden. Let cool before removing from pans. Store in fridge. Reheat in microwave 15 seconds.
