NFNS Faux French Toast

3 cups water3 packets Splenda1/2 tsp salt2 tsp cinnamon2 cups rolled oatsCooking spray
In medium pot on stovetop, bring water, splenda, salt and cinnamon to a boil. Stir in oats. Cook 3-4 minutes over medium heat. Remove from heat and cover; let stand ~5 minutes.
Coat 4x8 loaf pan with cooking spray. Pour mixture into pan and smooth top. Cover and refrigerate overnight. When you're ready to cook, run knife around edges of pan to unmold. Cut into slices the thickness of bread. Fry on griddle or in frying pan coated with spray until golden brown.
