Ingredients
Ingredients:*Italian Sausage, pork, 1 link, 5/lb Green Peppers (bell peppers), 1 chopped *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" Onions, raw, 1 medium. chopped (2-1/2" dia) Spinach, fresh, 3 cup Mushrooms, fresh, 1 cup, pieces or slices *Garlic, prepared chopped garlic , 1 tbsp *Italian Seasoning, 2 tsp *Del Monte Petite Cut Diced Tomatoes, 1 canV8 Vegetable Juice, Low Sodium, 6 oz *Alcohol - Cabernet Sauvignon Red Wine 1oz, 6 oz Pepper, red or cayenne, 2 tsp Parmesan Cheese, grated, .25 cup *Mueller’s Penne Rigate pasta, 4 cup, cookedBasil, 2 tbsp.
Directions
Using a large pan, pan fry sausage for 10 mins. Remove from pan and cut into slices. Add chopped peppers, onions and garlic to pan. Stir fry for 5-7 minutes. Add spinach, garlic, mushrooms, tomatoes and italian seasoning. Cook for 5 minutes. Add V8, wine, sausage, red pepper, parmesan cheese, pasta and basil. Cook for 8 - 10 minutes, stirring well. If sauce is too thin, add a small amount of corn starch. (Nutritional value not included.) Makes 6 servings.
