Breakfast Carrot cookies!

Ingredients
1/4 cup canola oil1/2 cup unsweetened applesauce1/2 cup Sucanat2 egg whites1 egg2 cups grated carrots1/4 tsp salt1 tsp pumpkin pie spice*1 tsp baking soda1 1/2 c oats1/4 cup flax meal**1 cup spelt flour1 cup raisins1/2 cup chopped walnuts
Directions

Preheat oven to 375°F.

Mix together oil, applesauce and sucanat. Add egg whites and regular whole egg and beat well. Mix in grated carrots. Add remaining dry ingredients and beat until just blended. Stir in raisins and nuts. Using a tablespoon, drop large spoonfuls onto a baking sheet. Bake 10 to 12 minutes. Let cool on the pan and move to a rack.

*You can make your own pumpkin pie spice using a mix of ginger, nutmeg, allspice (or cloves)

**If you don't have flax meal, just grind up some flax seeds in a coffee grinder or blender :-)

Makes approximately 24 large breakfast cookies!
