Sandy's Lemon Fresh Quinoa Salad

Ingredients
1 Cup of dry Quinoa, prepare as directions on bag1 whole ripe tomato diced1/2 cup green pepper diced1/3 cup green onions chopped3 TBS of olive oilJuice of 1 whole lemon
Directions
Cook Quinoa as per bag directions, cool. Add diced veggies. Whisk together olive oil and juice from 1 lemon, and pour on salad. Stir and chill for 1 hour. Add salt and pepper to taste. If you want to make a meal of this add crumbled feta or goat cheese.
