Oven Roasted Eggplant With Feta

Directions
1 Medium Eggplant Peeled & Sliced in 1/2 inch slices1/2 Cup Reduced Fat Feta Cheese1/2 tsp Sea Salt1/2 tsp Black Pepper
*Preheat oven to 400 degrees
*Cover cookie sheet with foil and spray WELL with cooking spray.
*Arrange slices on cookie sheet - spray eggplant and salt and pepper each side (keep in mind Feta is salty...don't go crazy!!)
*Bake for 15 minutes
*Flip eggplant and top with cheese
*Bake an additional 15 minutes
Makes 2 generous servings
