Ingredients:Perdue Boneless, Skinless Chicken Breast, All Natural, 1 filet, 4.8 oz., 3.33 serving (remove)*Grey Poupon Dijon Mustard, 3 tsp (remove)almond flour, 0.5 cup (remove)serrano ham, 2 oz (remove)manchego cheese, 2 oz (remove)Paprika, 1 tsp (remove)Garlic powder, .5 tsp (remove)Thyme, fresh, 1 tsp (remove)Basil, 4 leaves (remove)
My response to Chicken Cordon Bleu ... this one takes a tour of Spain again with the peppery taste of serrano ham and sharp manchego cheese. For an added twist of flavor a leaf of fresh basil is layered on the inside of the chicken with the serrano and manchego before it is rolled and closed. Dijon mustard coats the chicken so the blend of almond flour, herbs and spices will adhere. Pan seared and then oven roasted to finish.
Layer basil leaf, 1/2 oz each serrano ham and manchego cheese on thin chicken breast. Roll to close and secure with toothpicks. Paint with dijon mustard and roll in blend of almond flour, herbs and spices. Pan sear and finish in oven at 375' for about 15 minutes until golden brown and done.
