Ingredients
2 Slices Whole Grain Bread3/4 cup Fat Free or Skim Shredded Mozarella Cheese1 cup or less Romaine Lettuce1 to 2 tbsp Hummus
Directions
This is a delicious and quick sandwich that I make all the time.
Spread hummus on whole grain bread. I like to use Athenos regular hummus and Publix Bakery 5 Grain Bread. I usually use 1 tbsp hummus, but you can use 2 and it will not hurt, the nutritional info is calculated for 2.
Then sprinkle 3/4 cup fat free or skim shreeded mozarella cheese on each slice. I use Kraft Fat Free shredded mozarella cheese. Can use 1/2 cup or 1 cup instead as well.
Then put 1 cup or less Romaine lettuce on each slice.
Put slices of bread together, and you have a delicious sandwich!

*Optional:
Sometimes I also put chopped peanuts on the sandwich, adds a nice extra crunch. Will increase fat and calories though.

I really enjoyed this sandwich. I did have a problem with falling cheese. Next time I will warm up the cheese so it will stick. Otherwise I loved this sandwich. - 1/24/11
