Baked Chicken Chimichangas

Ingredients
3 skinless boneless chicken breast (shredded)16oz can low fat refried beans4oz can diced green chilies1 onion chopped1 jalapeno chopped (optional)1 cup shredded cheddar cheese1 cup salsa10 burrito sized tortillastaco seasoning
Directions
Cook and shred chicken in pan. After chicken is shredded add taco seasoning and 3/4cup of water. After water has cooked down add refried beans, diced green chilies, onion, jalapeno, shredded cheese and salsa. Take 1cup of mixture and put in in the center of one tortilla, wrap and place in baking dish. Repeat until all the filling has been put in the tortillas. Bake for 30min at 350 degrees.

    recipe was great,there was too much filling for my burrito shells so i cut it down to 1/2 a cup for the filling per serving.i didn't leave them in the oven that long either as i don't like my flour tortillas hard. - 1/24/11
