tina's orzo and chicken salad

Ingredients
# Orzo Pasta, 2 cup (remove)# Cucumber (with peel), 1 cucumber (8-1/4") (remove)# Onions, raw, 3 tbsp chopped (remove)# Feta Cheese, 6 oz (remove)# Peppers, sweet, red, raw, sliced, 1 cup (remove)# *Lemon Juice, 2 fl oz (remove)# Olive Oil, 4 tbsp (remove)# Thyme, ground, 1 tsp (remove)# Salt, 1 dash (remove)# Pepper, black, 1 dash (remove)# Roasting Chicken, light meat, 2 cup, chopped or diced
Directions
Cook orzo and set aside. Mix olive oil, thyme, lemon juice, salt and pepper, set aside.
Cook chicken until no longer pink.
Mix chicken, all vegetables, feta cheese and orzo together.
Add olive oil dressing.
Can be served hot or cold. I like both.
Makes 8 1- cup servings.
