Sausage Jambalaya

Ingredients
14 oz package Hillshire Farm Turkey Smoked Sausage, cut into bite-sized chunks1 TBSP olive oil1 medium onion, diced1 large red pepper, diced1 medium celery stalk, cut on the bias into 1/8" pieces1 box of Zatarain's yellow rice1 TBSP stick margarine1 can diced tomatoes (14oz)1 jar homesyle chicken gravy (12 oz)2 cups fat-free chicken broth2 TSP Luzianne Cajun Seasoning (in spice aisle)Hot Sauce (optional).
Directions
Cook the yellow rice according to package directions (using 1 TBSP of margarine for a lighter version). While the rice is cooking, continue preparing:

In a large sauce pan, heat 1 TBSP olive oil and saute the smoked sausage on medium heat until it is lightly browned. Remove the sausage from the pan, keeping the drippings in the pan.

Add the onions and red pepper to the pan and saute about 2 minutes on medium heat. Add the Celery and continue to saute until the onions become transluscent.

Add the sausage, can of diced tomatoes (including liquid), chicken gravy, and 2 cups chicken broth to the pan with the vegetables. Bring heat to low so that the pan is just under a simmer.

Add 1 to 2 TSP of the Luzianne Cajun seasoning. Stir and wait about a minute. Taste the sauce and add more seasonings if desired, depending on how spicy you like your food. For added heat, add several dashes of red hot sauce.

By now, the rice should be finished cooking, add the entire batch of rice to the pan and mix well. You can eat right away or let the flavors marry for a while. If you don't have a really large pan to hold all this, you can use a slow cooker at the the end when combining the rice with the rest of the ingredients. It gets even better if it sits on low in a slow cooker for awhile.
