Strawberry Banana Vegan Muffins

1.5 cups Flour1 tsp Baking Powder1 tsp Baking Soda1 tsp Cinnamon3/4 tsp Salt5 large Bananas, mashed1/2 cup Sugar1/3 cup Canola Oil1 tsp Vanilla Extract1 cup Strawberries, fresh, diced2 tbsp Turbinado Sugar, for sprinkling
Serving Size : Varies depending on size of muffin tin/ cups.
(When I made this recipe, I used 'Jumbo' Muffin Cups to get 11 muffins - approx. 1/2 cup of batter in each cup.)
* Pre heat oven to 350 degrees F.
* Whisk dry ingredients (flour, baking powder and soda, cinnamon, salt)
* Combine bananas, sugar, oil and vanilla extract.
* Add the wet ingredients to dry until just combined (DO NOT OVER MIX).
* Fold in strawberries.
* Place batter in muffin tins/ cups and sprinkle a bit of turbinado sugar on top.
* Bake 25-30 min. or until a toothpick comes out clean when poked into the muffin.
