Sauteed Potatoes

Ingredients
Potatoes, 2 cups cubed & steamedOnion, 1 cup, dicedGarlic, 2 cloves, mincedOlive Oil, 1 Tbsp. Peppers (optional)
Directions
Steam cubed potatoes until soft (takes about 20 minutes). Set aside. I often steam the potatoes the night before and refrigerate. This removes excessive

Heat olive oil in a pan. Add onions and saute until translucent. Add garlic and cook for 1 minute until garlic softened. Add potatoes and cook for 10 minutes (to get a nice crispy finish on the outside).

If using peppers, add during the last five minutes of cooking.

Add salt & pepper to taste. Enjoy!
