Smashed Potato Salad

Ingredients

1 Large or 2 Med. Potatoes per person (I used 8 large)4 large eggs.5 cup mayo.75 cup plain greek yogurt1 Tbsp mustardMed. onion diced2 cloves garlic minced2 whole dill pickles or 4 spears dicedZest and juice of 1 lemonDash hot sauce (more or less to your taste)Salt and pepper
Peel potatoes and cut in medium chunks, rinse, cover with cold water and bring to a boil boil for 15 to 20 minutes or until fork tender. ( I boil my eggs with my potatoes)
While potatoes are boiling combine the next 8 ingredients
Salt and pepper to taste.
Drain potatoes and eggs (peel and dice)
Add warm potatoes and diced eggs to bowl and toss to coat. Roughly smash as you toss so you have a slightly chunky slightly smashed salad. Serve right away warm or cool in fridge for later.
