Ingredients
6 small zucchini1/2 pund groun beef1 minced onion2 teaspoons of salt6 oz. of canned tomato puree2 tablespoons of Lemon Juice3 cups of water
Directions
Core washed Zucchini's and cut off ends. Save the insides and ends. Mix beef, rice, garlic, onion, and 1 tsp. of salt. Mix well and use to stuff zucchini. Make meatballs out of remaining meat mixture and place in a pot along with zucchini insides and ends. Add 1 tsp. salt, puree, lemon juice and water. Bring to a boil and cook over medium heat for 20 minutes or until tender.

    in Syria we cook really healthy food, but i make it in different way , we put Safflower with meat and rice ,( no lemon or onion), we use chopped dried mint and smashed garlic with tomato puree ,and its not only Zucchini we add eggplant,pumpkin,potatoes,green pepper we stuff them in the same way - 4/20/12

    my family is also Syrian they make it a little different, they omit the onion and lemon
    add 1/2t cinnamon and alspice &garlic cover w/ tom water cook a hr, sometimes use yellow long neck squash,they stand the sq.up in the pan, so the insides dont fall out. - 7/2/09
