Health Carrot Cake with Maple syrup cream cheese frosing

2 cups spelt flour or whole wheat flour 2 tsp baking soda2 tsp baking powder2 tsp cinnamon1 tsp salt2 cups grated carrots1 cup skim milk, soy milk or rice milk1 1/2 cups applesauce1 cup maple syrupoptional 1/2 cup walnutsFrosting"8 oz (1 cup) cream cheese4 oz (1/2 cup) maple syrup
Preheat oven to 350 degrees.
Mix all dry ingredients in a mixing bowl (flour, baking soda, powder, cinnamon and salt). Grate the carrots. Add carrots along with the rest of the ingredients except for the walnuts to the flour mixture. Mix until "just mixed". Mix in the walnuts (if using).
Pour into greased 9x13x2 pan. Bake for 40-50 minutes at 350F until a toothpick inserted in the middle comes out clean.
Cool for 30 minutes and then frost with cream cheese frosting.
Cream cheese & maple syrup frosting:
Bring cream cheese to room temperature.
Whisk the cream cheese until light, then add teh maple syrup and continue to whisk until thoroughly blended.
