1 medium potato with skin1 T. vegetable oilsalt and pepper to taste2-3 fresh basil leaves, chopped
Quarter potato, then cut it into 1/4" thick slices. Place in nonstick pan with oil and salt and pepper. Toss potatoes over medium heat until coated with oil and heated through. Spread potatoes out on baking pan or cookie sheet in a single layer and sprinkle with chopped basil leaves. Bake at 375 degrees F for about 30 minutes or until brown and crispy. Serve warm.
