Heirloom Tomato Salad

* 3 lbs diced heirloom and/or halved cherry tomatoes * 3/4 cup diced red onion * 1/2 cup chopped fresh basil * 1/4 cup extra virgin olive oil * 1 cup balsamic vinegar * salt & pepper to tasteOptional: * 1 clove garlic minced * 1 cup sliced cucumbers
Gently toss all ingredients in shallow serving bowl. Allow to marinate at cool room temperature before serving. Do not refrigerate, as this changes the sugars in the tomatoes and drastically reduces flavor.
Add a few leaves fresh basil on top for garnish before serving.
