Green Chili Quiches

Ingredients
1-7 or 8 oz can of diced green chilis (drained and patted dry)1 cup of sweet yellow corn canned (drained and patted dry)4 medium chopped scallions3 large eggs4 egg whites1 cup of 1% or skim milk3/4 cup of fat free mozz or cheddar cheese shreddedsalt to taste
Directions
Preheat oven to 400 degrees.

Mix eggs and milk in a bowl with a whisk. Add all other ingredients to whisked eggs.

Using small aluminum bowls (or any type of ramekin), ladle equal amounts into 6 containers. Bake for 25-30 minutes. I spray mine to avoid sticking.

Makes 3 servings. Two quiches per serving. You can put with side items and such.
