Raw Beet Slaw

Ingredients
4 raw beets, peeled and grated1 medium granny smith or similar apple, grated2 tbsp Rice Wine Vinegar1 tbsp balsamic vinegar2 tsp grated fresh gingerthe juice of one orange or clementinesalt & pepper to taste
Directions
I'd never eaten raw beets until Saturday morning, when I took a chance on this recipe.

Mix liquid ingredients in a large bowl and adjust it until it tastes good to you. Add in mixed beets and apple and combine well. You can eat immediately or keep it in the fridge for awhile. It goes really well with a nice cold summer supper. Keep it away from white t-shirts and tablecloths!
