Sweet Potato Chick Pea Burgers

Ingredients
800g sweet potatoes (about three medium/large potatoes)1 cup chickpea flour (besan flour)50g rolled oats30g unsalted sunflower seeds1/4 tsp salt1/2 packet taco seasoning1 tbsp dijon mustard (optional)1 tbsp chili powder
Directions
1) Preheat oven to 375F/180C. Boil sweet potatoes till tender. Mash in a medium sized bowl.

2) Add remaining ingredients and stir. Mixture will be fairly sticky, but thick enough to form into balls.

3) Shape it into ten burgers. Bake the burgers for approximately 8-10 minutes on each side.

4) Spray a frying pan with pam and grill the burgers till slightly crisped on the outside.

5) Dig in!
