3 Bean Soup w/Bacon & Chicos - CrockPot

1/2 med onion, chopped2 cloves garlic minced1 tbsp red chili flakes or red chili powder(optional)2 tbsp olive oil3 slices of bacon chopped into 1/2" pieces1/2 cup of dried Chicos (roasted, dried sweet corn)1/2 cup of each: pinto beans, black eyed peas, red kidney beans (or any other variation of beans)
Clean and wash beans and chicos before adding to slow cooker. Add water, bacon and chili flakes or powder.
Heat oil and lightly saute' onion and garlic - take care not to brown. Add mixture to beans.
Turn on slow cooker and cook for 6 hours. Enjoy!
Addition of salt not necessary as the bacon will provide saltiness.
