Easy Enchiladas

Ingredients
1 Chopped onion1 cup Black Beans Drained! cup shredded cheddar cheese 2 cups brown rice cooked16 oz ground turkey12 medium soft taco shells1 cup enchilada sauce
Directions
Brown the turkey and onion (use a little olive oil if you dont have a nonstick pan). Remove from heat

Assembly works best as a factory line. In the tortilla place 1/12 of the ground meat mixture and a large spoonful of beans. When full roll tortilla like a burrito and put in a deep non-stick baking dish.

Pour enchilada sauce over enchiladas. Top with cheddar cheese.

Bake at 350 for approximately 30 minutes, until cheese is bubbling.

Serve over brown rice.
