Chocolate Silk Pie

Ingredients
Crust:1 1/2 cups fruit-sweetened chocolate cookie crumbs (fat free Devil's Food cookies)3 tbsp soy margarineFilling:2 cups soft Silken Tofu3/4 cups sugar or natural sweetener1/2 cup unsweetened cocoa powder1 tsp vanilla extract
Directions
Put cookie crumbs in the bottom of a lightly oiled 9" pie pan.
Add melted soy margarine, and toss with a fork to blend. Press crumb mixture to the bottom and up the sides of the pie pan.
Bake for 5 minutes to set.
Remove from oven and let cool.
In a blender combine remaining ingredients and process until smooth.
Pour filling mixture into the crust.
Refrigerate for 2 hours before serving.

    This was very good, but I couldn't get it to the right consistency using a hand mixer. Also, it needs a little something else... maybe some raspberry extract mixed in, or sauce on top. Definitely a little whipped cream. Overall, a very good recipie I will definitely make again! - 2/5/09
