Chicken Salsa Verde Casserole

3 chicken breasts cut in pieces2 tbls extra virgin olive oil 1 doz corn tortilla's (cooked over burner til brown) 1/2 yellow onion diced1 lb monterey jack cheese shredded3 cans Herdez salsa verde
heat oven to 350 degree's
Cook chicken and onions in olive oil on stove top till cooked all the way through.
In a baking dish break up cooked tortilla's to line bottom of dish.
Put light layer of cheese and 2 cans of salsa verde over tortilla's.
Put cooked chicken and onion's on top of that.
Cover with 3rd can of salsa verde and remainder of cheese.
Cook in 350 degree oven until cheese is melted (about 30 min.)
Makes 6 servings.
You may serve with sour cream if desired some people find it spicy.
