Cranberry Granola

4 cups rolled oats1 cup dried cranberries (crasins).5 honey1 cup wheat germ1/2 cup sliced almonds1/2 cup chopped walnuts1/2 cup unsweetened applesauce1 1/2 tea. vanilla extract1 tsp. cinnamon
Preheat the oven to 300 degrees.
In a large bowl, stir together the oats, wheat germ, nuts, and dried cranberries.
In a medium sauce pan at medium heat, stir together the applesauce, honey, vanilla and cinnamon. Heat until just warm and well combined.
Drizzle warm wet mixture over the dry ingredients and stir to coat evenly. Spread the mixture out in a thin layer on a cookie sheet sprayed with canola oil.
Bake 30 to 40 minutes--stirring every 10 minutes to toast evenly. Allow to cool completely before serving or storing in an airtight container. Granola will become crunchy as it cools.
