Hummus and Spinach Stuffed Chicken

4 chicken breasts, butterflied1 c cooked spinach1/2 c hummus1 tbsp chopped peanutsServes 4-8, depending on size of chicken breast
Mix spinach, hummus and peanuts in a bowl.
Spoon mixture onto right side of each chicken breast. Cover with left side, secure with toothpick (not necessary, but helpful).
Spray nonstick pan and cook chicken breasts 10 minutes on each side, or until juices run clear.
If baking, preheat over to 350, cook 20 mins, flip and cook another 20 mins. Finish by giving the breasts some "frying pan love" to turn outside lightly crispy and brown.
