Oriental Eggplant Spread

1 lge eggplant4 cloves garlic1 Tbsp ginger, minced2 Tbsp NutraSea Oil (omega 3 oil or veg oil will do)2 Tbsp soy sauce2 Tbsp Brown Sugar1 tsp chili paste1 tsp rice vinegar1 Tbsp water4 green onions ( or 1/4 cup of chopped onion will do)1 tsp sesame oil2 Tbsp Cilantro, chopped
Makes 2 cups.
Stab eggplant with fork & bake at 350 F degrees until it's soft ( 40 mins)
wrap garlic in tinfoil with a drizzle of olive oil & put in oven with eggplant
When eggplant is cool, peel and chop.
Mix all ingredients together.
Taste even better if it's left to chill in the fridge for a few hours or overnight.
