Basil Chicken Bake

3 Chicken Breasts (4 ounces each)3 cups Healthy Harvest Rotini (uncooked)12 Leaves Fresh Basil (chopped)3 tsp Dried or Fresh Oregano3 Medium Red Ripe Tomatoes (diced)1 Clove Garlic (chopped or pressed)1 tbsp Extra Light Olive Oil1/2 Cup Chopped Green Pepper1/4 Cup Chopped Onion4 tbsp Red Wine VinegarSalt, to tastePepper, to taste4 ounces Part Skim Mozzerella Cheese (shredded)
Cut chicken breasts into strips. Heat oil in a medium sauce pan over low heat. Add raw chicken. Cook chicken completely.
Boil Pasta until almost done. Rinse.
In a bowl combine diced tomatoes, green pepper, onion, garlic, vinegar, salt, pepper, basil, and oregano.
Preheat oven to 350 degrees.
In a baking dish, add pasta first, then chicken, and then cover with vegetable mixture. Cover with shredded cheese. Bake at 350 degrees until cheese is melted.
