Sweet - Sour Sirloin

4 strips bacon, diced2 tbsp water1/2 large carrot, minced1 medium red onion, diced1 celery stalk, minced3 sprigs thyme, de-stemmed3 1/2 oz cranberries1/2 cup red wine1 cup beef stock1/3 cup maple syrup1 tsp lemon zest1 tbsp olive oil6 (5-oz) sirloin steaks, approx 1" thicksalt and pepper
In a large skillet, cook bacon and water until bacon renders its fat and crisps. Remove with a slotted spoon and set aside.
To the hot bacon fat, add carrot, onion, celery and thyme. Cook until vegetables begin to soften, then add cranberries, red wine, stock and maple syrup.
Cook, stirring often, for 7-8 minutes, then stir in the reserved bacon and lemon zest and remove from heat.
In another skillet, heat olive oil over medium-high.
Season steaks with salt and pepper and arrange in one layer in the hot skillet (you may need to do two batches).
Cook for 4 minutes per side, remove to serving plates and top with cranberry sauce. Serve with rice or mashed potatoes and roasted vegetables.
