Chocolate covered coconut macaroons

12 Tablespoons sweetened coconut1 lg egg white1 Tablespoon sugar2-3 Tablespoons chocolate chips
Whip egg white in mixer with sugar until stiff peaks form and gradually add in the coconut or fold it in by hand if you want 'poofier' cookies. Place by the spoonful on a parchment lined baking sheet that has been oiled and dusted with flour (rice, tapioca, etc. flour to keep it gluten free). Put in a 325 F oven for 11 mins. allow to cool completely on the cookie sheet before you attempt to remove the cookies. Once the cookies are cool melt the chocolate chips in the microwave and either drizzle chocolate over the top or dip the bottom of the cookies into the chocolate. cool and enjoy! (put cookies in freezer for 5 mins to cool chocolate faster).
