Firecracker Casserole

Ingredients
5 whole wheat tortillas2 lbs. ground beef1 large onion, diced1 large bell pepper, diced1 tbsp. chili powder1 tsp. ground cayenne pepper1 can Rotel1 can cream of mushroom soup1 can ranch style pinto beans w/jalapenos1 can stewed tomatoes12 oz. 2% sharp cheddar cheese12 oz. monterrey jack cheese
Directions
Brown ground beef, onions, and peppers in large skillet. Sprinkle with chili powder and cayenne pepper. Stir in rotel, beans, soup and tomatoes. Layer tortillas (torn to fit 13 x 9 pan) in greased baking dish, top with half of meat mixture. Spread half of cheeses over mixture, top with remaining tortillas. Spread the rest of the meat mixture, topped with cheeses. Bake in a 350 degree oven for 20-25 minutes until cheese is bubbly and lightly browned.
I've put this in a crockpot and it turned out quite nicely, also.
