Chicken Spanakopita

Ingredients
2 - 4 oz chicken breasts1 box frozen spinach1 small onion sliced1/2 cup reduced fat feta cheese1 TBSP Olive Oil
Directions
Defrost spinach and squeeze out all the liquid.

Saute onions and spinach in 1/2 TBSP olive oil until onions are soft. Remove from heat and cool. Mix in cheese.

Butterfly Chicken breasts and rub outside with olive oil.

Put 1/2 onion mixture into each chicken breast and close. They'll be really full...it will look kind of like a sandwich.

Broil for 10-12 minutes on each side.
