Zucchini with Onions, Tomatoes, Mushrooms, and Spices

Ingredients
2 medium fresh zucchini, 15 small cherry tomatoes, 5 medium white mushrooms, 1 clove fresh garlic, 1/2 yellow onion, 1 small red onion, 5 leaves fresh basil, 1 Tbsp canola or olive oil. Salt and pepper to taste.
Directions
Heat 1 Tbsp canola or olive oil in a pan
Add 1 clove crushed garlic to hot oil and simmer about 2-3 minutes
Add the onions (chopped) and the mushrooms (chopped), heat about 10 minutes or until onions are carmelized. Toss about every 2 minutes.
Add the fresh basil, stir and heat for another minute or 2.
While the onion and mushrooms are cooking, slice the 2 zucchinis and place in a bowl with a couple inches of water. Cover with plastic wrap and open side to vent. Microwave on high for 4-5 minutes or until tender. (Or you could steam or boil the zucchini)
Add the cherry tomatoes (halved) and the cooked zucchini to the pan, toss with the other ingredients.
Lower heat to low/medium and cover. Cook for 10 more minutes for flavors to fuse. Stir every 3 minutes or so to prevent sticking.
Serve- makes about 4-2/3c servings.
