Firecracker Stew

2 pounds Chicken breast1 cup hatch chilie peppers chopped1 cup onions chopped1 red pepper (sweet) chopped2 cups frozen corn2 cloves garlic, chopped4 cans Chicken broth (low fat)1 1/2 cups long grain brown rice1 teaspoon salt1/2 teaspoon pepper
Combine all ingredients in a crock pot and cook all day. Remove the chicken, shred with two forks and return to stew. Serve.
Can serve with Tortilla Chips and/or shredded Cheddar cheese (not included)
