1 1/2 c. skim milk + 1 T apple cider vinegar1 T flax meal + 3 T water (can substitute 1 egg, slightly beaten)1 1/2 c. whole wheat flour1/4 c. oat bran2 tsp. baking powder1/2 tsp. baking soda1/4 tsp. salt1 1/2 tsp. cinnamon2 T honey2 T. canola oil1 tsp. vanilla2-3 T lite sour cream (optional, but improves texture)
Whisk together milk and vinegar in a small cup or bowl. Whisk together flax meal and water in a separate small bowl. Mix dry ingredients (whole wheat flour, oat bran, baking powder, baking soda, salt, and cinnamon) in a large bowl.
Add honey, oil, vanilla, and sour cream to flax meal mixture. Stir in milk. Add wet ingredients to dry ingredients and stir until a few lumps are left. Cook on a pre-heated, greased griddle or pan.
