Huevos Rancheros Supremos

Ingredients
1 Large Egg2 small Corn Tortillas1/4 can Enchilada sauce (Medium)1/4 can Diced Tomatoes with Zesty Green Chiles1/12 cup chopped parsley (or cilantro)1/2 Tbsp Lime juice1/4 can pinto Beans1/4 cup Feta Cheese (or Queso Fresco)
Directions
Makes 2 small corn tortillas. Slightly Mash Beans with 2 Tbsp Water and microwave them for 2 mins. Meanwhile Combine Enchilada Sauce and Diced Tomatoes in saucepan bring to a boil and simmer for 5 mins or until slightly thick. Remove from heat and add parsley and lime juice. Cook egg how you desire (scrambled, fried, etc). Cover tortillas with beans, eggs, sauce, then crumbled cheese.

Serves 1 person use 4x ingredients for 4 servings.
