Summer Season's Mincemeat Pie Filling

Ingredients
3 large apples, diced2 lbs chopped rhubarb3.5 oz green (unripe) cherry tomatoes, halvedjuice and zest of one orange juice and zest of one lemon1 cup Demerara sugar1/4 cup honey1/4 cup molasses1 1/2 cups raisins6 oz dried apricots, diced3 oz prunes (about 12)4.6 oz diced dates3.8 oz dried cranberries4 oz currants1/2 cup rum2 tbsp red wine vinegar1/2 tsp salt1/2 tbsp allspice1/4 tsp cayenne1 tsp nutmeg1 tbsp cinnamon1 tbsp fresh-grated ginger
Directions
Combine all ingredients in a large pot. Cover, and cook over low heat for 3 hours.
Ladle into sterilized jars, leaving 1/2" space.
Process for 20 minutes in a water-bath canner. Alternatively freeze up to 1 year.
