Chicken Lentil Curry

Ingredients
10 ounces chicken breast meat1 cup diced onion1 cup chopped sweet red pepper1 cup chopped green pepper1 cup chopped carrots1 cup chopped celery1 package red curry paste2 Tbsp garlic2 Tbsp olive oil.5 cup coconut milk light2 Tbsp flour
Directions
Heat olive oil in large stock pot. Add onion and garlic and saute, then add other vegetables and chicken and saute. Add curry paste and mix well

Add chicken broth, 2 cups water and lentils and simmer until letils are tender. Whisk 2 Tbsp flour into half cup of coconut milk and add to pot. Cook for 10-15 minutes.

Makes around 14 half cup servings. I serve with homemade fresh spring rolls.
