Curried Zucchini with mushrooms

Ingredients
Zucchini, 3 cup, sliced (remove)Onions, raw, 1 large (remove)Mushrooms, fresh, 10 medium (remove)Red Ripe Tomatoes, 1 large whole (3" dia) (remove)*Cumin seed, 1 tsp (remove)*Canola Oil, 2 tbsp (remove)Ginger Root, 1 tsp (remove)Garlic, 1 tsp (remove)Turmeric, ground, .25 tsp (remove)*Coriander seed, 1 tsp (remove)Chili powder, .5 tsp (remove)
Directions
Slice zucchini, onion and mushrooms. Heat oil, add cumin, add onions and garlic/ginger paste, saute for a while until the onions become transluscent. Add sliced tomatoes, all dry spices and mix, add zucchini, mix and cook uncovered on medium heat. Add muchrooms, mix well and cover the sauce pan and keep on cooking until the vegetables are a bit tender, but firm. Serve hot.
