2 cups of oats1 1/2 cups of soy flour1/2 tsp of salt1 Tbsp of Vanilla3 Tbsp of cinnamon1 tsp of baking soda1 cup of Z sweet (erythritol a sugar alcohol)1 cup of Brummel and Brown natural yogurt1 Tbsp of coconut oil2 cups of spinach8 oz. of Nature's Hollow Mountain Berry Preserves
Spray 8X 8" pan with non stick spray and pre-heat oven to 375. Mix the first 7 ingredients together well. Then cut in the natural yogurt and coconut oil in the above mixture until it is no longer powdery. Press half of the new mixture into the bottom of the pan and bake for 15-20 mins. Then blend the spinach and mountain berry preserves together for 5 mins. Pour over the bottom crust that has baked to a golden brown and top with the remainder of the crust. Bake for 20-25 more mins. Cool for a couple of hours and serve with a sugar-free ice cream.
