JackieO's Egg Drop Soup

Egg, fresh, 3 large wholeEgg white, 2 Chicken Broth, 1 boxSoba Noodles, 1 bunch or servingCarrots, raw, 1 carrot julienned Fresh Chives, 4 tbsp chopped or scallionsSoy Sauce, 1 tbsp or to tastePepper, black, 1 dash or to taste
Pour broth into a large pan and bring to a boil. Meanwhile julienne the carrots, chop the chives or scallions and beat eggs in separate bowl.
Once the broth is at a boil, reduce the heat to medium. Add soba noodles and cook at a low roll for 3 minutes, then add carrot, chive/scallion, soy sauce and pepper. Continue cooking for 1 minute or until soba noodles are soft. Remove soup from heat and "drop" spoonfuls of the egg mixture in, stirring slightly.
